Introduction

A great zesty start to any dinner party, its like baba ganouche only Indian inspired. A great zesty start to any dinner party, its like baba ganouche only Indian inspired.

Ingredients

    1 Ea Eggplant, Large
    2 T Lemon Juice
    1 t Cumin, Powder
    1 Ea Garlic Clove, Chopped
    1 T Olive Oil
    1/2 t Sea Salt

    1 Ea Pita cut in 8 wedges (or your favorite flat bread)
    5 Ea Green Olives
    1 Ea Pickled Jalepeno



Directions

For the Eggplant Hummus
Preheat oven to 350 degrees, place eggplant on a sheet pan and roast until tender, 35 - 50 minutes, cool. When cool, scoop out flesh and place flesh in a food processor with the lemon juice, cumin, garlic clove, olive oil, and sea salt, puree until smooth 1 - 2 minutes.
Makes about 1 Cup

Place 1/2 C Eggplant Hummus in a bowl, set on a plate, arrange 4 slices of flat bread, 5 olives, and 3 slices pickled jalapenos, garnish with fresh herbs, sit back, and enjoy.

    I loved this! It is so zesty and flavorful and yet so every simple and approachable. A great way to work eggplant into a menu. My kids really loved it too! - 8/8/10
