1 medium onion, sliced into strips1 tbsp low-fat margarine1 large tomato, diced1/4 cup tomato paste1/2 cup frozen spinach1/2 cup frozen peas250 grams firm tofu50 grams bhuna curry paste
1. In a medium pot, fry the onions with the margarine until translucent. Add the tomato and continue to fry until tomato breaks down.
2. Add the tomato paste, peas, spinach, tofu, and curry paste and 1 cup water and simmer until all the ingredients are cooked.
3. Serve over rice or with naan bread. Serves 4.
