Parmesan crusted chicken fillet

Ingredients
3 chicken breast fillets, skinless1/4 cup bread crumbs (use low-cal bread if desired)1/4 cup freshly grated parmesan cheese1 Tbsp fresh oregano, finely chopped1 Tbsp fresh thyme, finely chopped1 whole egg1 Tbsp olive oil
Directions
Butterfly the 3 chicken breast fillets or flatten with a kitchen mallet
Combine breadcrumbs with fresh herbs and freshly grated parmigiano cheese in a shallow dish

Lightly whisk 1 egg in another shallow dish.

Dip the chicken into the egg and then dredge in the parmigiano mixture.

Heat 1 Tbsp olive oil in a skillet.

Cook chicken fillets on each side until golden brown and cooked through.

Serve hot with seasonal fresh vegetables
