Ham and Chickpea Soup

Olive oil cooking spray1 onion (diced)1 carrot (diced)2 stalks celery (diced)2 cloves garlic (chopped)4-6 cups ham broth 2 cups ham (diced)2 (19 ounce) cans chickpeas (drained and rinsed)1 teaspoon oreganopepper to taste2 cups fresh spinach, or any other green vegetable of choice
1. Heat the cooking spray in a large sauce pan.
2. Add the onions, carrot and celery and saute until tender, about 10-15 minutes.
3. Add the garlic and saute for a few minutes.
4. Add the stock, ham, chickpeas, oregano and bay leaf and simmer, covered on low heat for at least 20 minutes.
5. Add the spinach and cook until wilted.
Serving Size: Makes 4 servings
