Stuffed Chicken Breasts

2 boneless skinless chicken breast halves1 cup cooked brown or white rice1/4 cup (1 oz) shredded mozzarella cheese1 Tbsp chopped fresh basilSalt and pepper to taste
Cut a slit in the side of the chicken breasts large enough to insert filling. Season inside of chicken breasts with salt and pepper. Combine rice, cheese and basil. Spoon rice mixture into slit in chicken breasts. Heat a large skillet over medium high heat and cook stuffed chicken breasts 2 minutes on each side or until just golden brown. Transfer chicken to shallow baking pan and bake at 350F for 20-30 minutes or until juices run clear.
Minced tomato may also be added to the rice mixture if desired.
