Ingredients
1 T Avacado Oil1.5 C Fresh Onion4 Large Carrots4 Large Stalks Celery1 Clove Garlic2-3 Roma TomatoesSaltPepper4 C Simple Truth Organic Chicken Broth1 Can Cannellini Beans1C Fresh Spinach chopped4 T Raw Cilantro
Directions
Dice onion, carrots, celery, garlic and tomatoes small. Add avocado oil to pot. Once avocado oil is hot add diced veggies and saute until cooked down a bit but still firm. Add the can of cannellini beans and chopped spinach and simmer for about 5 min. Add cilantro and serve.
