Crockpot Pork Roast and Veggie Mash

Ingredients
2.5 cup Sweet Potato chopped2.5 cup Potato chopped3 cup Celery chopped1 cup Carrots chopped2.5 cup Onion chopped2 pound Pork Roast1.25 cup low sodium chicken broth.5 tbls. Salt3/4 pouch of dry mash potato mix.
Directions
Coursly chop both kinds of potatoes and carrots putting them in the bottom of the crockpot.
Place roast in next.
Cover roast with onions and celery, sprinkle with salt.
Cook on high for 6 hours.
After 6 hours lift roast out of crock pot and scoop veggies out using a slotted spoon mash or blend veggies using mashed potatoes to thicken as needed.
