cauliflower salad

Ingredients
chopped up cauliflower very fine, chop up tomatoes, scallions, and cucumbers. mix 1/2 cup olive oil with the juice of one lemon. add about 2 bunches of parsley and drizzle over vegetables. let sit in refrigerator for at least one hour. salt and pepper to taste
