Grilled Chicken withTomato Basil Brilliance

Ingredients
8 oz chicken breast, no skin GRILLED w Italian seasoning4 medium tomatoes, chopped3 cups fresh spinach¼ cup fresh basil leaves1 cucumber, chopped1 mozzarella cheese stick2 tbsp olive or flax oil4 tbsp balsamic vinegar
Directions
Grill chicken with a simple blend of Italian seasoning.

In a medium bowl, combine the tomatoes, cucumber, basil, spinach and cheese. In a small bowl whisk the oil and vinegar until blended. Drizzle over salad and serve atop grilled chicken.
