Coconut Lime Quinoa Salad

Ingredients
1 cup quinoa1 red pepper2 Tbs shredded coconut1/2 lime - lime juice1 celery stalk1/2 red onion
Directions
rinse quinoa, cook on medium heat with 1 cup water (or broth) when boils, turn to low. Cook covered until the liquid is absorbed- about 10 mins
dice onion, pepper, and celery.
mix all together
