Vegetable Omelette

Ingredients
2 lge Eggs, beaten1 sprig Shallots, sliced½ Tomato, diced very small¼ Green Capsicum, diced very small¼ Yellow Capsicum, diced very small¼ Red Capsicum, diced very small¼ cup Tasty Cheese, shreddedSprinkle All Purpose Seasoning or Salt & Pepper
Directions
1. Heat non-stick frypan
2. Mix all ingredients together
3. Pour all ingredients into heated frypan
4. Cover and cook under egg looks set
5. Fold one side over the other and serve

Serving Size: Makes 1 large omelette
