Classic Chicken Salad

1 cup diced chicken1 tablespoon minced red onion1 heaping tablespoon minced celery1 teaspoons chopped fresh flat-leaf parsley (I rarely add this–it is good though)1 teaspoons freshly squeezed lemon juice2 teaspoons mayonnaise or more1/2 teaspoon Dijon mustardDash of hot sauce–optionalCoarse salt and ground pepper, to taste
Directions
Mix ingredients together well and refrigerate.
