•1 c. edamame, cooked•2 c. quinoa, cooked•Ό c. kalamata olives, drained, sliced•2 c. diced cucumber•2 scallions, chopped•½ c. feta cheese, crumbled•2 tbsp. olive oil•2 tbsp. lemon juice•salt and pepper to taste
Directions
Cook quinoa and mix all ingredients together. Enjoy!
