Cranberry walnut macaroon

Ingredients
2 large egg whites1/2 cup granulated sugar2 tsp corn starch1 tsp vanilla, lemon, raspberry or other extract2 cups unsweetened coconut1/2 cups dried cranberries (add hot water to soften them if needed, then drain and pat dry)1/4 cup walnuts crushed
Directions
beat egg whites till foamy. Add 1/2 cup sugar slowly while continuously beating egg whites. Add 2 tsp corn starch , and 1 tsp of vanilla, lemon or other fruit extract and beat for another 3 minutes on highest speed. Add coconut, cranberries and crushed walnuts and carefully fold into mixture.
Scoop onto parchment paper lined cookie sheet with large tablespoon or 1 inch icecream/cookie scoop. bake for 20 minutes on 325 degrees or until lightly browning.
