Grilled Corn and Tomato Jamboree

Ingredients
3 tbsp. Olive Oil1/4 Dijon mustard1 tbsp. white wine vinegar3/4 tsp kosher salt or to taste8 ears fresh corn4 tomatoes cut into 1/4 inch dice1 scallion thinly sliced1/4 cup chopped mixed herbs (basil, parsley, tarragon)
Directions
Pre heat grill to high.
grill corn, turning frequently until slightly charred all over 3-5 minutes.
cool corn slightly and remove kernels from the cob and transfer corn into a large bowl
add the tomatoes, scallion and chopped herbs to the corn
Toss, add the dressing, toss again and serve at room temperature
