1 cup raw sugar1/2 cup (1 stick) butter1 egg1/2 cup applesauce1/2 cup ground flax seed1 1/2 - 2 cups whole grain flour (fresh ground, if possible)1 teaspoon baking soda1 teaspoon baking powder1 teaspoon salt1/2 cup dry oatmeal1/2 cup crushed pecans1/2 cup crushed walnuts1/2 cup raisins1/2 cup dried cranberries12 oz package chocolate chips (I like Girrardelli)
Preheat oven to 350. Mix butter, applesauce, egg, sugar. Mix in ground flax seed. Add baking soda, baking powder and salt with flour and oatmeal, and fold into wet mixture. Now, add nuts, raisins and chocolate chips with a sprinkling of flour on top. Drop by spoonfuls onto greased cookie sheet. Bake for 10 - 15 minutes at 350.
