Chicken Skewers for Spaghetti

Ingredients
1 eggplant, peeled, cut into large cubes8 oz Portabella mushrooms, whole (rinsed)2 medium green bell peppers, cut into 1"-2" squares3 small onions, cut in quarters1 lb boneless, skinless chicken breast strips 2 tsp Italian seasoning
Directions
Preheat bbq grill or set oven to 350.

Layer ingredients on skewers as desired.

Spray pan or grill top with non-stick cooking spray (if desired).

Grill or bake for 30 minutes.

Season shortly before serving.
