Yeast Griddle Cakes

Ingredients
1 package active dry yeast2 cup warm water2-3 Tbsp. sugar2 cups all-pourpose flour1 egg1/2 tsp. salt3 Tbsp. melted butter1 cup 2% milk
Directions
The night before combine yeast, water, 1 Tbsp. sugar, 1 cup flour in a mixing bowl. Cover with a cloth and leave overnight to rise. The next morning beat the egg well in a mixing bowl and add 1-2 Tbsp. sugar. Beat again, add the yeast mixture, stir in salt, butter and the second cup of flour; add milk if mixture seems too thick. However batter should be alittle thicker than is customary. Serve at once with melted butter, syrup, honey or jelly.
