Summer Berry and Arugula Salad

1/2 red onion, cut into ¼-inch slices3 tablespoons olive oil1 tablespoon balsamic vinegar1 tablespoon chopped fresh chives3 cups arugula1/4 cup crumbled feta cheese1 cup fresh raspberries
Preheat grill to medium-high heat. Brush
onion with 1 tablespoon oil. Grill onion, covered
with grill lid, 6 to 8 minutes per side or until
tender. Chop onion. Whisk together vinegar,
chives, 2 tablespoons oil and salt and pepper to
taste; stir in grilled onions. Place arugula in a
bowl, and top with cheese and berries. Gently
toss with dressing.
Serving Size: makes 2 servings
