10 oz uncooked orzo4 oz reduced fat feta cheese, crumbled2 medium tomatoes, chopped coarsely2 Tbs extra virgin olive oiljuice of 1 lemon (about 2 Tbs)salt & pepper to taste1/3 cup Italian Flat Leaf parsley, roughly mincedKalamata olives, optional as garnish
Cook orzo al dente, and rinse in cold water. Let stand at room temperature 15-20 mins. Combine with remaining ingredients.
