Low Carb Cheese Danish

Ingredients
Cream Cheese Filling:4 oz. cream cheese, at room temperature1/4 cup Swerve1 egg yolk1 tsp. lemon juice1/2 tsp. vanilla extractPastry:4 eggs, separated1/4 tsp. cream of tartar3 oz. cream cheese, at room temperature1 T coconut flour2 T Swerve1/2 tsp. cinnamon
Directions
Line a Whoopie Pie pan with parchment paper. Preheat oven to 300 degrees.

In a blender, mix together the ingredients for the filling and process until smooth. Set aside.

In the bowl of a mixer, place the egg whites and cream of tartar. Beat on high speed until the egg whites hold a stiff peak.

In a separate bowl, combine 3 egg yolks, 3 oz. of cream cheese, coconut flour, and cinnamon. Mix well. Fold in the egg whites. Divide the mixture among ten compartments in the Whoopie Pie pan. Spoon the filling mixture into the center of each Danish.

Bake for 25 to 30 minutes.
