Creamy Tomato Basil Soup

Ingredients
Can of Diced Tomatoes, No Salt AddedHalf of a White Onion, chopped3 Cloves of Garlic, minced2 tbsp Unsalted Butter2/3 cup of Skim Milk1 cup WaterSalt, Pepper and Basil to TasteOptional: Freshly Grated Parmesan for Garnish
Directions
1. Sauté the onion and garlic in butter at medium heat.
2. Add tomato, seasoning, and water. Bring to a boil and then simmer for 10 minutes with constant stirring.
3. Add milk.
4. Remove from heat and blend.
5. Return to a low heat until warm.
6. Serve with parmesan cheese on top.
