6 cups old fashioned oats1 cup coconut flakes1/2 cup coconut oil1/2 cup olive oil1/2 cup chopped dried pineapple3/4 cup ground chia seed3/4 cup ground quinoa3 tsp. grated lemon rind1 cup chopped almonds3/4 cup water
Mix dry ingredients in large bowl. Heat liquids, including coconut oil, on low until coconut oil melts. Pour liquids over dry ingredients. Stir until thoroughly blended. Pour all into 13x9 pan lined with wax paper. Lay another sheet of wax paper over all, and press very firmly. Cool until firm. Cut into bars. Seal individual bars in snack size zip baggies, and place in gallon size freezer bag. Store in the freezer.
