Lemon Chicken sandwich

Ingredients
250g of minced chicken1 tablespoon of lemon juicesalt and pepper to taste1 small head of lettuce1 medium onionCream cheeze (or mayonaise) Bread slices1 table spoon Olive oil
Directions
In a clean frying pan, fry the minced chicken and onions with olive oil. Fry till the chicken is no longer pink. Add salt and pepper to taste, and the lemon juice. Stir well and pour the contents in a mixing bowl, and allow to cool.

Chop the small head of lettuce and mix with the cooked chicken. Add 1 or 2 spoons of cream cheese and mix.

To the slices of bread, spread the cream cheese the apply your lemon chicken filling.

    totally amazing great change for lunches if you pack your own lunch and are getting bored of the same sandwich everyday. i also took thelemon zest and added that in for an extra kick, the left over lemon and cream cheese i mixed together to put on the bread was awesome too. - 9/22/07
