Potato, Leek and Chicken soup (with a kick)

1T Butter2 Leeks (chopped)1/2 Large Onion (finely chopped)1t Garlic (minced)2 Chicken Breasts (finely chopped, skin and bone removed)2 Medium Potatoes (chopped and peeled)1t Soy Sauce1 Chicken Stock cube500ml Water1T Tabasco (or to taste)1t Portugese Chicken Spice (or other Chicken Spice)Black Pepper (to taste)
Melt the butter in a saucepan. Add the leeks, onion and garlic and sauté until starting to soften. Add the chicken and cook until it's no longer pink. If the chicken starts to stick add the soy sauce.
Add the water, potato and stock cube to the mixture and bring to a boil.
Add the tabasco, chicken spice and black pepper. Turn down the heat and simmer until the potatoes are done. Puree some of the potatoes and adjust the seasoning.
