Jasmati Rice and Beans

Ingredients
1.5 cups jasmati (long grain white) rice3 cups water1.5 cups red kidney beans, rinsed well and drained1.5 cups black beans, rinsed well and drained1 cup chopped yellow onion1 cup chopped bell peppers (red, green, yellow)3 roma tomatoes, chopped3 Tbs apple cider vinegar1 Tbs Sriracha hot sauce8 Ballpark all white meat turkey franks, sliced1 Tbs garlic powder or 1 clove garlic, pressed1 Tbs Mrs. Dash Extra Spicy Seasoning Blend1 tsp oregano1 tsp cumin
Directions
Chop onion, peppers and tomato to 1/4 inch dice.
Slice turkey franks into 1/2 inch pieces. Set aside.
Combine rice and water and bring to a boil.
Reduce heat and simmer 20 minutes.
While rice is simmering, melt butter in a large skillet. Add onions, peppers, and spices. Sauté 5 minutes.
Add tomatoes, beans, franks, hot sauce and vinegar.
Stir over medium-low heat 5 minutes.
Add cooked rice and mix well.
