Spanish Potatoe Tortilla

1 Sweet bell pepper (colour of your choice,) chopped1 Onion chopped5 medium potatoes6 large eggs4 Tbsp Canola or Olive oilSalt and pepper to taste
Microwave potatoes until cooked and let cool. In the meantime, chop onion and sweet pepper. Add oil to non-stick frypan and cook, stirring occasionally until pepper is soft and onions are translucent. While the peppers and onions are cooking chop cooked potatoes into 1/4" pieces. Beat eggs and set aside. Add potatoes to cooked onions and peppers and stir. Let potatoes brown in the pan for a few minutes then add the eggs. Stir to blend and let cook on one side. When partially cooked and browned on the underside, flip tortilla and cook and brown the other side.
