Roasted Sweet Potatoes with Thyme

Ingredients
* Sweet potato, 5sweet potatoes, (about 5" long), peeled and cut into 3/4" to 1" thick rounds * Olive Oil, 1.5 tbsp * Garlic, 4 cloves, coarsely chopped * Thyme, fresh leaves, 5 tsp, a couple sprigs reserved * Salt, .5 tsp * Chipotle flakes, .5 tsp
Directions
Preheat oven to 450. In a large mixing bowl, combine all ingredients but garlic, and mix well to coat evenly with oil. Arrange potato slices in a single layer on a heavy weight baking sheet. Place on top rack of oven and roast until tender and slightly browned, about 40 minutes total. Half way through cooking time, turn potato slices over and sprinkle garlic over slices. Return to oven to finish cooking. Serve warm or at room temperature, with reserved fresh thyme on top.

    I didn't flip the potatoes 1/2 way through cooking but instead, put a spoonful of this mixture: olive oil, dried thyme, minced fresh garlic...There wasn't a crumb left when we were done! - 7/4/09
