Cucumber Salad

Ingredients
1 large Cucumber (peeled)2 dashes Red pepper2 Tbsp Onion, finely diced2/3 cup White Vinegar2 Tbsp Splenda
Directions
1. bring vinagar, red pepper and splenda to a boil, let cool for
2. peel and slice cucumber, dice onion. Place in a tupperware container, top with vinegar mixture.

**note - can also add about .5 cup diced red pepper

    I make this all the time, but don't see the point of boiling anything or adding splenda.... I simply cut up a cucumber (with peel), cut up onion and place all in a sealed container and shake well. I then put into fridge for a few hours and then serve. - 6/8/08
