White Beans with Smoked Turkey & Swiss Chard

2 T Grapeseed Oil2 small onions, chopped1 t garlic, chopped32 oz chicken stock1 lb dry white beans, rinsed1 smoked turkey leg (about 1 lb)5 cups water, and maybe more1 cup chopped carrots1 cup chopped celery1 bunch swiss chard, chopped
Heat oil in large soup pot. Add onions and garlic and saute for 2 minutes. Add chicken stock, turkey leg and dry beans with 5 cups of water. Bring to boil, then lower heat and simmer about 2 hours. Check during cooking in case you need to add water. After an hour, add carrots and celery. After 1.5 hours, add the chard.
