Cauliflower Frittata

Ingredients
6 eggs, scrambled1 cup chopped cauliflower1/2 bell pepper, chopped1/3 onion, chopped2 T. Olive oilSalt, pepper
Directions
Heat oil in 10" skillet on medium heat. Add veggies, sauté unit almost tender, stirring frequently. Distribute veggies evenly across skillet & then pour eggs over. Salt and pepper to taste. Stir until it starts to set. As the bottom of egg is setting, lift bottom and tilt pan to let uncooked egg run underneath. When no more egg will run under, put lid on pan and continue cooking until egg in middle is set. Slice in 8 equal servings.
