Mint-Citrus Tea

--4 tea bags (I prefer black jasmine tea)--citrus--about 6 limes, 4-5 lemons, 2-3 oranges, or 1 grapefruit, or any combination--fresh mint leaves (you can vary the amount--I like about 1/2 cup of them)--1/3 cup sugar, or to taste--ice and water to fill up a 2-quart pitcher
1. Boil 3 cups of water. Steep the tea bags and the mint in the hot water, but remove the tea bags after 5 minutes. Add the sugar to the water to dissolve. Leave the mint steeping about 15-20 minutes. (More if desired.)
2. Zest the citrus. I liked about a tsp. of lime zest, but experiment with amounts.
3. Juice the citrus.
4. Strain the mint/tea/sugar mixture into a pitcher. Add the citrus and zest, and water and ice to fill the pitcher. Stir and serve.
Serving Size: Makes 8 1-cup servings.
