Fresh Guacamole

1 Avocado, scooped out1 tbsp red onion, chopped fine4 cherry tomatoes, diced1 lime, juiced1 tbsp fresh cilantro, minced Pinch of Salt
Slice the avocado in half, remove the seed and scoop the avocado into a small bowl. Add the onions and a pinch of salt and mash together with a fork. Depending on how chunky or creamy you like your guacamole is how much you mash it. Then add the tomatoes and cilantro and just lightly mix together so that all the flavours are mixed. Chill and serve. Another great addition to this is to top it with a couple dashes of cumin.
