Low Carb Turkey Goat Cheese Spinach Meatloaf

2 lbs of lean ground turkey2 tbsp. butter1/2 onion diced fine3 cloves of garlic minced2 large eggs1/2 cup of plain dry oatmeal(ground is best but it can go in as is)4 tbsp. steak sauce1 tsp salt1/2 tsp black pepper2 cups raw baby spinach4 oz. crumbled goat cheese
Heat oven to 350 degrees.
Line a baking sheet with foil and lightly grease.
Saute onions and garlic in butter over medium to low heat.
In a mixing bowl combine ground turkey, eggs, oatmeal, steak sauce, salt, pepper and mix well.
Add the cooked onions and garlic to the ground turkey mixture and mix again.
Divide the mixture in half to make two rolls. Lay a piece of plastic wrap or wax paper down. Spread out one half of the mixture into a rectangle shape about 1/2 inch thick. Place half of the spinach and half of the goat cheese down the center. Fold one end over the other and place on the baking sheet.
Do the same with the other half of the mixture.
Serving Size: Serves 8 or more.
