Banana Zucchini Muffins

Ingredients
1 1/2 cup all-purpose flour1 cup sugar1 tsp cinnamon1/2 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 egg1 cup mashed banana1/2 cup applesauce1 tsp vanilla1 cup shredded zucchini1/2 cup chopped walnuts (optional...not included in nutrition info)
Directions
In a large bowl, comine the first 6 ingredients. In a small bowl, beat the egg, bananas, oil and vanilla. Stir into dry ingredients just until moistened. Fold in zucchini (and walnuts). Fill 12 muffin cups. Bake at 325 degrees for about 25 minutes, or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan. Yield: 12 muffins.
