Black Bean and Tomato Omlette

Ingredients
2 large eggs1 Tbs Lactose Free Whole Milk1 Tbs diced red onion1 Tbs Seasoned Black Beans (drained and rinsed)1 Tbs Petite diced tomatoes, w/sweet onion1/4 c Mexican 4 cheese blend shredded cheese
Directions
Mix milk with eggs and set aside. Spray pan with cooking spray and add all other ingredients (excluding egg mixture). Saute on low/medium heat for a few minutes then add egg mixture. Cook, lifting edges occasionally to allow uncooked egg on top to drain to bottom and cook. When there is no more runny egg on top, gently flip over. Cook until done, top with cheese and fold in half.
