Mixed Berry Energy Bars

Ingredients
4 c. ROLLED oats1c. brown rice flour (can also try mixing protein powder and flour half & half)1 tsp cinnamon1 c. unsweetened applesauce3 egg whites & 1 whole egg3 Tblsp. Honey1 tsp vanilla extract1/3 c. dried mixed berries (no sugar added)1/3 c. dried apricots (no sugar added)¼ c. slivered almonds
Directions
Mix dry ingredients by hand

Mix wet ingredients by hand

Mix dry and wet ingredients together by hand with spatula

Mix berries and almonds into oat mixture

Spray 9x13 pan with cooking spray.

Press mixture into pan. Bake at 350° for 25-30 minutes. Check at 25 minutes with toothpick.

Let cool. Then cut into 16 bars.
