Sweet Potato, Chicken and Bean Soup

Ingredients
2 cups chicken broth2 cups Dry cooked or canned Cannellini (white kidney) beans1.5 cups diced sweet potatoesOnion, 1 cup, chopped 3 Master's Touch Vine Sweet Mini Peppers, chopped1 lb Chicken - Extra Lean Ground chicken, 454 gram(s)1.5 cup Raw Sweet Potatoes.5 tsp Sage, ground or fresh 1 tbsp Parsley .5 tsp Thyme, ground or fresh .25 tsp Pepper, black1 dash Sea Salt.5 tbsp Extra Virgin Olive Oil
Directions
Soak dried beans the night before in warm water or use can.
Start beans cooking in chicken broth while you prep other ingredients.
Sautee chicken with olive oil.
Chop fresh herbs, onions and peppers.
Add them to chicken as it finishes cooking to lightly sauté.
When beans a tender add sweet potatoes, onions, peppers, herbs and seasoning.
Cook about 30 min or until potatoes are tender.
