1 cup uncooked Quinoa (cook per directions to yield 2 cups cooked)3 Tbls Extra Virgin Olive Oil2 Tbls White Wine VinegarJuice from 1 lemon (or 3 Tbls)2-3 Green Onions, thinly sliced (Red onion can also be used for bolder flavor)1 can Black Beans, rinsed and drained1 can Chick Peas, rinsed and drained2 Tbls Diced Green Chilies4 oz Reduced Fat FetaSalt & Pepper to tasteAdd 2 cups Grape Tomatoes (halved) last to prevent bruising
Cook Quinoa according to package and allow to cool. Add liquids to Quinoa, then mix with remaining ingredients. Refrigerate at least 8 hours before serving.
