Blueberry-Lemon Muffins

1 3/4 C flour1/2 C sugar2 1/2 t baking powder3/4 t salt1-2 t grated lemon peel1 egg, beaten3/4 C milk1/3 C oil1 C blueberries
Prepare regular muffin pan. In a medium bow, stir together the flour, sugar, baking powder and salt. Stir in the grated lemon peel. In a large bowl, beat the egg, with the milk, oil. Add the flour mixture to the egg mixture, stirring just to combine the ingredients. Be careful not to beat the batter too much; it should still have a few lumps. Fold the blueberries into the batter. Spoon the batter into the prepared cups, filling them only 2/3 full.
Bake the muffins at 400* for 20-25 minutes or until they test clean.
