Freezer Breakfast Burritos

8 slices Jalapeno Bacon, chopped12 red potatoes, shredded1 red bell pepper, diced12 large eggs1/2 cup salsa2 ounces mozzarella cheese20 whole wheat tortillas
1. Cook bacon until desired crispness. Set aside to drain.
2. Fry potatoes in bacon fat until desired crispness (about 10 minutes). Set aside to drain.
3. Saute bell pepper in bacon fat. Scramble eggs with some salt and pepper. Add eggs to pan. After about 5 minutes, add salsa and cheese.
4. Once cheese is melted, stir in bacon and potatoes.
5. Place 1/3 cup egg mixture on each tortilla and roll into burritos. Wrap each burrito in plastic wrap and place in gallon freezer bags (I used 2). Freeze until ready to eat.
Serving Size: Makes 20 burritos (1/3 cup filling in 1 tortilla)
