Broccoli and Cheese Quinoa Power Bites

2 cups cooked quinoa (about .66 cups dry)4 whole eggs ( or 8 egg whites), beat if using whole eggs1 zucchini shredded (about 1 cup)2 cups finely chopped broccoli (blanched)2 cups grated colbey jack cheese1 tsp garlic powder
Preheat oven to 350 degrees. Prepare muffin pans with cooking spray
In a large mixing bowl, combine ingredients and mix to combine. Using a 1 tablespoon schoop, add 1 heaping scoop of mixture to each baking cup.
Bake about 20 minutes until edges are golden brown.
Let cool for 5 minutes. Remove from pan and serve
Serving Size: Makes 36 mini muffins and 6 regular muffins
