Ingredients
1 medium-sized onion, chopped3 cloves garlic, minced1 Tablespoon olive oil1.5 cups chicken broth (can also use vegetable broth or water)1/2 cup lentils1/2 cup bulgur wheat
Directions
1. Saute onions and garlic in olive oil until caramelized.
2. Add the remaining ingredients and bring to a boil.
3. Turn heat down to low and let simmer for 30 minutes.

Makes about 3 half cup servings.

I double the recipe because it stores well in the fridge. Oh - and this is tasty hot or cold. Enjoy!
