Shrimp Jambalaya

Ingredients
Chicken Andouille sausage, 170.1 gram(s) (6 oz)*Crisco Pure Vegetable Oil, 2 tbspSweet Onion, diced, 1 cupCelery, raw, 3 stalk, large (11"-12" long), dicedPepper, sweet, red, fresh, 1 cup, choppedPepper, sweet, yellow, fresh, 1 cup, chopped Pepper, sweet, orange, fresh, 1 cup, choppedClove of Garlic, dicedPaprika, 2 tsp Old Bay Seasoning, 1 tspRed Ripe Tomatoes, 2 large, whole (3" dia), choppedWhite Rice, long grain, uncooked, 1 cupChicken stock, low fat, 4 cupsShrimp, raw, deveined, no shell, 16 ozScallions, raw, 3 medium (6-7" long), trimmed
Directions
*Crisp sausage in cooking oil in deep pan for a few minutes. Add diced onion, celery and peppers. Add clove of garlic, diced. Add 1 cup of chicken stock. Cover and cook until all veggies are soft for a few minutes. Add paprika and Old Bay seasoning. Add chopped tomatoes. Add remaining 3 cups of chicken stock and 1 cup long grain rice. Cover and cook for 20 minutes. Add fresh shrimp, cover and cook no longer than 3 minutes. Sprinkle scallions on top right before serving.
