Super Chocolatey Zucchini Bread

1 cup whole wheat flour½ cup all-purpose flour½ tsp nutmegPinch salt½ tsp baking soda½ tsp baking powder¼ cup unsweetened cocoa powder1 egg1 tsp vanilla6 packets Truvia½ cup brown sugar3 tbsp Nutella½ cup smooth ricotta (or regular ricotta, pureed)½ cup unsweetened apple butter¼ cup semisweet chocolate chips14 oz grated zucchini
Preheat oven to 350°F and grease a loaf pan.
In a mixing bowl, beat together the egg, Truvia, sugar, Nutella, ricotta and applesauce.
Add the flours, nutmeg, baking soda, baking powder & cocoa, stirring just until moistened.
Fold in chocolate chips and zucchini.
Pour batter into prepared pan
Bake 1 hour and 15 minutes.
Cool in the pan for 10 minutes, then carefully turn out and cool completely on a wire rack
Serving Size: Makes one 9x5" loaf, 12 slices
