Chicken Tortillia Soup

1/2 cup chopped onion 1/2 cup chopped carrot 1/2 cup chopped celery 1T olive oil 12 oz chicken breast 4 t chicken boulion 4 cups water 1 14.5 oz can of chopped tomatoes 1 8oz can tomato sauce 1/4 cup chopped cilantro 1.5 t dried oregano 6oz Tostitos Light Tortillia Chips 1 cup Kraft 2% shreaded cheddar cheese
In a large stock pot, saute onion, carrots, celery with olive oil until tender.
Cook chicken breasts in a separate pan. Once cooked, chop into bite size pieces or crumble in a food processor.
Once vegies are tender, add water, tomato products, spices (all the ingredients except the chips and cheese). Bring to a boil, then simmer for about 30 min.
Crush 1 oz of chips and place in soup bowl. Serve soup over the top. Add slightly less than 1/4 cup cheese over the top. Serve with a dollop of fat free sour cream if desired. (Sour cream calories are not added to this recipie.
