HCG Phase 3 Thousand Island Dressing (no sugar)

Ingredients
1/2 medium green pepper1/2 medium red pepper1 medium onion2 hard boiled eggs, large3/4 c Trader Joe's low fat Mayo, no sugar2 tbs tomato paste1.5 tsp Gourmet Garden Chili Spice1 tbs red wine vinegarSalt and Pepper to taste after overnight chill
Directions
using a food processor, mince the peppers and onion on purse mode until small bits. Place into a dish towel and ring until moisture is gone. Place peeled eggs in bowl and pulse until finely chopped. Put egg and pepper/onion mixture in a mixing bowl. add remaining ingredients and gently stir to combine. If you want it thinner, add a bit more mayo. Chill overnight for best flavor. After over night chill, adjust seasoning to tase with salt and fresh crushed black pepper.

    This gets better after it sits overnight and the flavors have time to blend. If you squeeze out the liquid well it will be just thin enough to spread throughout your salad greens and not runny. - 8/8/14
