Cold & Spicy Thai Noodle Salad

12 oz package of udon noodles4 scallions (finely sliced)3 medium stalks celery (diced)1 large red bell pepper (diced)1/2 c. diced carrots1/2 c. chopped snow peasDRESSING:3 tbsp chili sauce (Thai or similar)3 cloves garlic, minced2 tbsp sesame oil2 tbsp mirin2 tbsp rice wine vinegar2 tbsp soy sauce1" piece ginger root, grated
1. Cook udon noodles according to package directions (follow the cooling directions particularly)
2. Slice, dice, mince, and chop vegetables as directed, and combine with cooled udon noodles in a large bowl.
3. In a smaller bowel, whisk together all ingredients for the dressing, and pour over the noodle/vegetable mixture.
4. Turn and combine with tongs until thoroughly coated.
Serve & enjoy!
