Asparagus Spaghetti

1/2 lb Asparagus (cut in half)1 cup sliced mushrooms1 cup diced purple onion2 cloves garlic minced or roasted garlic6 Roma tomatoes diced3 tblsp Fresh Basil5 oz Baby Spinach1 cup Raw Sharp Cheddar Cheese 1/2 cup freshly grated Romano cheese(optional for topping)1/2 lb Organic WW Spinach Spaghetti4 cups Purified WaterWhite Pepper to Taste (I add extra)Italian Complete Seasoning (optional)Shoyu Sauce (optional)Optional: Large Shrimp, Chicken Breast
I use all organic ingredients. If you choose to add shrimp, choose wild caught.
Cook over medium heat in deep sause pan, water, onions, bottom in of asparagus, garlic, basil, tomatoes, & seasonings for 5 min. When boiling, break spahetti in half and add to pan making sure spaghetti is coverd with sauce. If necessary, add ore water to cover. When spaghetti is just tender, add remaining asparagus, spinach mushrooms and cheddar. Turn stove to low heat and stir until spinach is cooked. Place in plates and sprinkle with Romano Cheese. Serve with Toasted garlic Bread.

The combination of ingredients was very good. The taste was a little bland, but I didn't use Italian seasoning. i will next time. I thought the cheddar cheese was a strange addition, and I couldn't taste it. I may leave it out next time. - 5/12/08

Raw Cheeses are fresh and have a unique flavor. Next time try purchasing raw cheddar from your local health food store or co-op.
