Veggie Quesadilla

Ingredients
red peppergreen pepperyellow pepper1 tsp safflower oil1tsp lemon pepper seasoning.5 cup cheddar cheese2 whole wheat tortillas
Directions
Julienne peppers.
Toss with Safflower oil and lemon pepper seasoning.
Stir fry in a pan until soft.
Place in mixing bowl and mix with cheese.
Place bottom tortilla on warm quesadilla maker.
Place veggie mixture in thin layer on top.
Place top tortilla over top and close lid.
Cook for 5 minutes or until crisp.


Serving Size: makes 1 quesadilla, or 6 pieces cut
